Zucchini Balls

INGREDIENTS
- 2 Zucchinis – peeled and grated
- 2 Carrots – peeled and grated
- 1/4 cup of dill roughly chopped
- 1/4 cup parsley roughly chopped
- 1/2 cup of spring onions finely chopped
- 1 tablespoon of red pepper flakes (optional)
- 1/4 cup of cornstarch
- 1/4 cup of Panko breadcrumbs
- Salt to taste
These soft, moist, savory vegan beauties are flavorful, delicious and colorful to eat. I was inspired to make these after having lunch at a local Greek restaurant. These come together really quickly and the recipe does not involve too much hard work!! Although Zucchini is a summer vegetable, I enjoy cooking it all your around as it is very versatile. It can be enjoyed as is or when mixed with other vegetables, it tastes absolutely delicious.
- Grate the zucchinis, sprinkle them with some salt and set aside
- Grate carrots, and set aside
- After 10 minutes, using the palm of your hands, squeeze out all the excess water from the zucchinis and the carrots, and add them in a deep bowl
- Add the rest of your ingredients to the same bowl
- Mix well and form small to medium size balls using your hands or an ice cream scooper (see the picture below)
- Pan fry them immediately till they are golden brown from all sides, and enjoy them with the sauce/chutney of your choice
- Traditionally you eat them Tzatziki, but I enjoyed them with my crack sauce!!
