Spinach Dal (Lentils)

INGREDIENTS

  • 1 cup of Moong Dal- washed and drained

  • 2 cups of palak (spinach) washed

  • 2 tablespoons of Ghee (clarified butter) or neutral oil

  • 1 tsp of Turmeric powder

  • 1 onion finely chopped

  • 1 green chili-finely chopped

  • 1 tsp of Jeera (cumin powder)

  • 1.5 tsp of coriander powder

  • 1 tsp of cumin powder

  • 1 tsp of garam masala

  • 1 large tomatoe- grated

  • 1 tablespoon of ginger and garlic paste

  • 3 cups of water

  • salt to taste

  • cilantro for garnish

Dal (lentils) is India’s staple food and is cooked all over India with different flavors and tempering. From North to South, you will find dal in every household and it is the go-to dish on most weeknights as there are so many varieties of dals that you will never get bored of eating them. Dal can be prepared with curry, or dry. It can be eaten with rice, roti or even salads (lentil salads), and it is a vegan’s best friend. I love cooking spinach and dal together as it a bowl packed with nutrition and not to mention the marriage of the two is absolutely yummy. You can prepare this dish in a pressure cooker or even on a stove-top. For this recipe, I opted to use Moong Daal (Split Moong Beans without skin), but you can prepare this with any dal (think split red gram, mung beans, etc).

  1. In a pressure cooker, add dal, salt, and turmeric powder and cook it till the dal is completely cooked (usually up to 4 whistles) and set aside (do not throw away the dal water)
  2. In a skillet, heat ghee and add cumin seeds
  3. Once they start to splatter, add onions and cook till the onions are golden brown
  4. Add ginger and garlic paste and cook for 1 minute
  5. Add the masalas (coriander powder and cumin powder) and mix well (NOTE: lower the flame when adding the masalas in order to avoid them burning)
  6. Add tomatoes and cook till all the masalas are well cooked and the masala has left oil
  7. Add spinach and cook for 5-7 minutes
  8. Add dal, mix well and allow to cook for 5 minutes
  9. Add garam masala
  10. Garnish with cilantro
  11. Enjoy this dal with roti, naan or basmati rice
