When I crave Idlis and am short on time, I turn to my Instant Idli recipe to satisfy my cravings. They are soft, spongy, and delicious and perfect for a quick weeknight recipe.
- In a bowl mix semolina and yogurt and stir well
- Set aside for 30 minutes
- Take a deep pot and add 1 cup of water and bring the water to boil
- After 30 minutes add salt, water (1 tablespoon at a time, do not add all the water) to the semolina and yogurt mix and mix till the mixture is of like a pancake consistency
- Grease your idli trays, pour batter in each tray and allow to steam with the lid closed for 25 min on medium flame
- Enjoy with Sambar and coconut chutney!
