INGREDIENTS

  • 1 cup semolina

  • 1 cup sour yogurt

  • 1 tsp salt

  • 1 1/2 cups of water

  • 2 tsp of Fruit Salt, Eno

When I crave Idlis and am short on time, I turn to my Instant Idli recipe to satisfy my cravings. They are soft, spongy, and delicious and perfect for a quick weeknight recipe.

  1. In a bowl mix semolina and yogurt and stir well
  2. Set aside for 30 minutes
  3. Take a deep pot and add 1 cup of water and bring the water to boil
  4. After 30 minutes add salt, water (1 tablespoon at a time, do not add all the water) to the semolina and yogurt mix and mix till the mixture is of like a pancake consistency
  5. Grease your idli trays, pour batter in each tray and allow to steam with the lid closed for 25 min on medium flame
  6. Enjoy with Sambar and coconut chutney!
