INGREDIENTS
- 1 bag of frozen sweet potato fries
OVEN TOPPINGS INGREDIENTS
- 1 15oz can of black beans
- 1 yellow or red onion finely chopped
- 1 jalapeno pepper finely chopped
- 1 cup of grated cheese of your choice (I used Pecorino Romano)
- 1 cup frozen corn (defrosted)
CHIPOTLE CREMA INGREDIENTS
- 1/2 cup of mayonnaise
- 1/2 cup of greek yogurt
- 2 tablespoons of pureed chipotle peppers in adobo sauce

No July 4th is complete without barbeque, corn, and fries, and for this July 4th, I bring you a dish of Mexican Sweet Potato Fries!! It is exactly what it sounds like, Sweet Potato Fries baked to perfection and then loaded with black beans, onions, and cheese and topped with guac and chipotle crema!
I love fries but I particularly love sweet potato fries as they are healthy and packed with fiber. Although these Mexican Sweet Potatoe Fries are a tiny bit indulgent by loading them with cheese but you can certainly scale back on that! It is like eating nacho fries! I promise you that once you make them, you will always want to make them and your guests will be begging you for the recipe.
What kind of Sweet Potato Fries did you use?
So, I took the easy way out and used the frozen sweet potato fries but you can certainly opt to make them at home. I always find it difficult to cut sweet potatoes and using the frozen ones means one less thing for me to do!
Can I air-fry the Sweet Potatoes Fries?
Absolutely! You can bake or air-fry them. They are perfect both ways.
Can I skip the toppings for Mexican Sweet Potatoe Fries?
Yes, if you prefer to eat cheesy fries, then you can skip all other toppings or load them with toppings of your own choice. It is totally up to you!
- Prepare the Chipotle Crema by mixing all the ingredients and set aside
- Bake the fries as per the packet instructions and when they are baked layer them with cheese and the oven toppings
- Bake for 5-7 minutes till the cheese melts
- Remove from the oven and top the fries with lime, a little chipotle crema and guacamole. You can serve the remaining chipotle crema on the side
- Serve and eat immediately
