INGREDIENTS

1 pound of Chicken wings washed and pat dried

1 large onion sliced lengthwise

1/4 cup of fresh ginger and garlic finely minced. I would highly encourage you to use fresh ginger and garlic in this recipe as they are the main ingredients in this dish but if you don’t have access to them, then use what you have at hand

1/4 cup yogurt

1 tsp of cumin seeds
-
1 green chili. Remove the seeds when you slit it open if you don’t like your food spicy

1 tsp of turmeric
-
1 tsp of kashmiri red chili powder

2 tsp of coriander powder
-
1 tsp of cumin powder
-
1 tsp of garam masala
-
1 tsp of chaat masala

Handful of Kasuri methi
-
2 tablespoons of oil
Chicken wings can be made in a million ways and I love eating them a bbq sauce but I can’t deny that they taste scrumptious when prepared as masala wings. They are coated with masala made with onions, and stars of the show, ginger and garlic which make these wings irresistible!
METHOD
- Heat oil in a large skillet
- Add cumin seeds and when they start to pop add onions
- Cook them till they are golden brown
- Add ginger and garlic and cook for 1 minute
- Add chicken wings to the pan and also add all masalas (minus garam masala) and salt
- Bhuno (mix) this on high flame for 3-5 minutes
- Lower the flame, add yogurt, kasuri methi and cook for a few minutes
- Cook with the lid closed on low flame for 10-15 minutes or till it leaves oil on the edges
- Add garam masala and chaat masala and garnish with cilantro
- Enjoy with rice, roti, or naan.
