INGREDIENTS

1 pound of Okra (Bhindi)

1/4 cup of Gram Flour (Besan)

1/4 cup of Rice Flour

2 tablespoons of cornstarch- this is optional. I did not use it for this recipe

2 tablespoons of salt
-
2 tablespoons of red chili powder
-
1 teaspoon of turmeric powder
-
1 teaspoon of coriander powder
-
2-3 tablespoons of Dry Mango Powder (Amchur)

Chaat masala to taste.

Juice of 1 fresh lemon (optional)

Oil for frying
NOTE: you may have yo adjust the seasonings as per your taste.
It’s Fry-Day folks so why not fry up some Okra (kurkuri bhindi)!!A perfect snack with tea (or any drink of your choice) layered with red chili powder and chaat masala! You will start with 1 and will not stop till it’s wiped out completely! It’s crunchy, salty, tangy all at the same time and a must have for the weekend!
- Heat oil for frying in a deep pot or kadai
- Do not wash the bhindis. Just wipe them clean with a paper towel
- Cut the head and the tail of the bhindis and cut them open in the middle
- Remove the seeds (this part is tedious so try to recruit your family to help you to speed up the process)
- Slice it in half again and keep in a bowl
- Once all the seeds have been removed add in all the masalas minus the salt
- Mix really well till the bhindis are completely coated in the mixture
- Add salt, mix well, and fry immediately. Do not let them sit in the salt or they will wilt
- Fry till the bhindis are golden brown and crisp
- Remove from oil and immediately sprinkle them with chaat masala, lemon juice, and red chili powder
- Enjoy!
