INGREDIENTS

  • 2 Italian sausages- remove the casing and slice into small pieces

  • 2 leeks – washed and cut into fine pieces

  • 1 shallot chopped finely or a small white onion

  • 6-8 cloves of garlic finely chopped

  • 1 tablespoon of Italian seasoning of your choice

  • Salt to taste

  • 1 tsp of crushed red pepper

  • 2 tsp of crushed black pepper

  • 2 tablespoons of cooking oil

  • 1/4 cup of plain yogurt or Tzatziki

  • Any Tortilla Chips of your choice

I feel like leeks are an underused vegetables but when used in the right combo, they can elevate the cooking flavors to the next level. They have a mild onion like flavor, so in this recipe, Italian Boats, I decided to use them with Italian sausage. This recipe comes together very quickly so if you are still looking for that perfect Thanksgiving appetizer, look no further!

  1. In a skillet add onions, and garlic and cook for a few minutes
  2. Add Italian sausage, salt, pepper, crushed red pepper, italian seasoning and allow to cool for 7-10 minutes
  3. Add leeks to this mix and cook for another 7-10 minutes till the leeks are tender
  4. Adjust any seasoning
  5. Scoop the mix into small tortilla chips, top with a dash of Tzatziki and enjoy!
