INGREDIENTS

2 Italian sausages- remove the casing and slice into small pieces

2 leeks – washed and cut into fine pieces

1 shallot chopped finely or a small white onion

6-8 cloves of garlic finely chopped

1 tablespoon of Italian seasoning of your choice

Salt to taste

1 tsp of crushed red pepper

2 tsp of crushed black pepper

2 tablespoons of cooking oil

1/4 cup of plain yogurt or Tzatziki

Any Tortilla Chips of your choice
I feel like leeks are an underused vegetables but when used in the right combo, they can elevate the cooking flavors to the next level. They have a mild onion like flavor, so in this recipe, Italian Boats, I decided to use them with Italian sausage. This recipe comes together very quickly so if you are still looking for that perfect Thanksgiving appetizer, look no further!
- In a skillet add onions, and garlic and cook for a few minutes
- Add Italian sausage, salt, pepper, crushed red pepper, italian seasoning and allow to cool for 7-10 minutes
- Add leeks to this mix and cook for another 7-10 minutes till the leeks are tender
- Adjust any seasoning
- Scoop the mix into small tortilla chips, top with a dash of Tzatziki and enjoy!
