Harissa Mushroom Pasta

INGREDIENTS

  • 1 box of white button mushrooms. Cremini, Shitake, Oyster mushrooms will also make great choices

  • 5 cloves of garlic peeled and finely chopped

  • 1 yellow medium sized onion finely chopped

  • 6 tablespoons of mild harissa. You can also opt to use spicy Harissa

  • 1 tablespoon of dried basil leaves

  • 3 tablespoons of Olive Oil

  • 10 oz of spaghetti pasta

  • Salt and pepper to taste

Harissa is a North African hot chili pepper paste, the main ingredients of which are roasted red peppers, Baklouti peppers or serrano peppers, spices and herbs such as garlic paste, caraway seeds, coriander seeds, cumin and olive oil to carry the oil-soluble flavors. The marriage of harissa with mushrooms with the aromas of garlic brings together a mildly spicy and flavorful and textured dish. I chose to dress this up with pasta; however, grains like quinoa, millet, barley will also compliment this dish. This dish came together in a shot span of time which is a blessing when we are trying to get dinner together under 30 minutes on a weeknight. It also requires minimal prep work which is a big time saver.

  1. Boil the pasta as per the instructions on the box and set aside
  2. Wipe clean the mushrooms with a damp paper towel
  3. In a mixing bowl, mix the mushrooms, Harissa and 1 tablespoon of oil
  4. Heat the rest of the oil in a skillet
  5. Once heated, add garlic and sauté for 30 seconds
  6. Add onions and cook till they are translucent
  7. Add the mushroom mix, basil leaves, salt, and black pepper
  8. Mix well and allow to cook for 10 minutes or till the mushrooms are tender and have cooked down
  9. Add pasta, mix well
  10. You can also top it off with grated Parmesan Reggiano for extra flavor
