Green Burger

INGREDIENTS

2 cups parsley- washed and finely chopped

2 cups cilantro- washed and finely chopped

1 cup dill- washed and roughly chopped

2 tablespoons of dried fenugreek leaves

2 scallions- washer and roughly chopped
NOTE: you can eliminate the work with veggies by buying dried herbs available in all Middle eastern stores

1 large white or red onion- finely chopped and sautéed

5 eggs
-
1 tsp of salt
-
1 tsp of baking powder
-
1 tsp of turmeric
-
3 tablespoons of neutral oil
This green burger is inspired from an iranian dish called kuku sabzi. Growing up in Tehran, this was one my favorite vegetarian dishes and loved eating it with naan or just by itself. Vegetables have never looked and tasted better so don’t shy away from greens, this is the best way to eat them!
- Add all the ingredients listed above in a large bowl (not the oil)
- Mix well till all the herbs are coated well with the egg. The mixture should not be runny
- In a large oven proof skillet add oil
- Once the oil heats up add the mixture to the skillet and flatten it as much as you can
- Cook on low to medium flame with the lid closed for 8-10 minutes
- After that broil in the oven for 3 min without the lid
- Remove from the oven and let it cool
- In the meanwhile toast a burger bun
- Layer both sides of the bun with a generous helping of mayonnaise
- Top with your favorite salad
- Cut the burger in a round piece, layer on top of the salad and enjoy!
