INGREDIENTS

1 Asian Squash or 2 regular small squash. Peeled and cut into 1-2 inch round pieces

I large onion sliced thinly lengthwise

2 tomatoes cut lengthwise

Fresh ginger and garlic
-
1 tsp of cumin seeds
-
1 tsp of turmeric powder
-
1 green chili finely chopped
-
1 tsp of coriander powder
-
1 tsp of cumin powder
-
1 tsp of garam masala
-
Cilantro to cook with and some to garnish

2 tablespoons of neutral oil
Todays meatless recipe is Squash/kadu sabzi, a serious nutrition packed vegetable. This recipe can be used with any type of squash but for this particular recipe I used an Asian squash. This recipe is extremely simple and comes together really quickly.
- Heat the oil oil in a pan add cumin seeds
- Cook for 1 min and add ginger and garlic and cook for 45 seconds (be careful not to burn the garlic)
- Add green chilis and mix well
- Add turmeric powder and mix well
- Add onions and cook till they are light golden brown
- Add tomatoes and all the spices (minus garam masala) and a little bit of cilantro
- Mix well and cook with the lid closed for 2-4 min on low flame
- Add the squash (your mixture should be loose and runny at this point)
- Cook on low flame for another 20 min stirring occasionally
- Add garam masala and garnish with cilantro
- Enjoy with naan, roti or rice
