Garlic Salmon and Couscous

INGREDIENTS

For Couscous

  • 1 cup of couscous of your choice

  • 1 small yellow onion finely chopped

  • 1 1/4 water or chicken/vegetable stick

  • 2 cloves of garlic minced finely

  • Vegetables of your choice

  • Salt to taste

  • 1 Tablespoon of oil

  • Freshly chopped dill for garnish

For Salmon

  • 4 pieces of salmon fillet

  • 2 oz of butter

  • 10 cloves of garlic

  • 1 tsp of red crushed pepper flakes

  • Salt and pepper to taste

  • Freshly chopped dill for garnish

  • 1 Tablespoon of oil

It’s all about garlic today! Garlic infused couscous and butter and garlic salmon. Doesn’t get better than this for a Wednesday!!

METODH

    For Couscous

  1. Heat oil in a pan and add garlic
  2. Cook for 30 seconds and add onions
  3. Cook for 2 min and add vegetables of your salt
  4. Add salt and pepper
  5. Cook on high flame for 2 min
  6. Add Couscous
  7. Roast for 1 minute
  8. Add water
  9. Cover with the lid and cook on low flame for 2 min and remove from heat
  10. Let it rest for 5-7 minutes and then fluff with a fork
  11. Add dill and mix well

For Salmon

  1. Season the salmon generously on both sides
  2. Rub the butter and garlic mixture generously on each filet
  3. Heat the oil in cast iron skillet
  4. Add salmon fillets skin side down in the sizzling pan
  5. Cook for 2-3 minutes and finish off in the
  6. Oven at 375 degrees for 15 minutes. Do not overcook the fish
  7. Garnish with dill
  8. Enjoy
