Garlic Salmon and Couscous

INGREDIENTS
For Couscous

1 cup of couscous of your choice

1 small yellow onion finely chopped

1 1/4 water or chicken/vegetable stick

2 cloves of garlic minced finely

Vegetables of your choice

Salt to taste

1 Tablespoon of oil

Freshly chopped dill for garnish
For Salmon
-
4 pieces of salmon fillet
-
2 oz of butter
-
10 cloves of garlic
-
1 tsp of red crushed pepper flakes
-
Salt and pepper to taste

Freshly chopped dill for garnish

1 Tablespoon of oil
It’s all about garlic today! Garlic infused couscous and butter and garlic salmon. Doesn’t get better than this for a Wednesday!!
METODH

For Couscous
- Heat oil in a pan and add garlic
- Cook for 30 seconds and add onions
- Cook for 2 min and add vegetables of your salt
- Add salt and pepper
- Cook on high flame for 2 min
- Add Couscous
- Roast for 1 minute
- Add water
- Cover with the lid and cook on low flame for 2 min and remove from heat
- Let it rest for 5-7 minutes and then fluff with a fork
- Add dill and mix well
For Salmon
- Season the salmon generously on both sides
- Rub the butter and garlic mixture generously on each filet
- Heat the oil in cast iron skillet
- Add salmon fillets skin side down in the sizzling pan
- Cook for 2-3 minutes and finish off in the
- Oven at 375 degrees for 15 minutes. Do not overcook the fish
- Garnish with dill
- Enjoy
