INGREDIENTS

1 can of garbanzo beans rinsed and drained

1 cup fresh parsley leaves

1 cup fresh cilantro leaves

1/2 yellow onion roughly chopped

1/3 cup flour (such as all-purpose, white whole)

1/2 cup of cornstarch
-
Juice of 1 fresh lemon
-
1 teaspoons ground cumin
-
1 teaspoon fine salt
-
1/2 teaspoon black pepper
-
6 small garlic cloves, peeled and roughly chopped
-
Enough oil to pan fry them in a skillet
Introducing my home made falafel recipe for this meatless monday. It’s full of zesty, fresh flavors, lightly pan fried (they are traditionally deep fried) and served with a drizzle of beetroot dressing!
- Add everything in a food processor and pulse until the mixture is of a coarse texture
- Transfer into a bowl and refrigerate for 1 hour
- Form balls using an icecream scoop and pan fry them in batches
- Enjoy them with a dressing of your choice or Tzatziki. I enjoy them with salads or as a wrap!
