INGREDIENTS

  • 1 can of garbanzo beans rinsed and drained

  • 1 cup fresh parsley leaves

  • 1 cup fresh cilantro leaves

  • 1/2 yellow onion roughly chopped

  • 1/3 cup flour (such as all-purpose, white whole)

  • 1/2 cup of cornstarch

  • Juice of 1 fresh lemon

  • 1 teaspoons ground cumin

  • 1 teaspoon fine salt

  • 1/2 teaspoon black pepper

  • 6 small garlic cloves, peeled and roughly chopped

  • Enough oil to pan fry them in a skillet

Introducing my home made falafel recipe for this meatless monday. It’s full of zesty, fresh flavors, lightly pan fried (they are traditionally deep fried) and served with a drizzle of beetroot dressing!

  1. Add everything in a food processor and pulse until the mixture is of a coarse texture
  2. Transfer into a bowl and refrigerate for 1 hour
  3. Form balls using an icecream scoop and pan fry them in batches
  4. Enjoy them with a dressing of your choice or Tzatziki. I enjoy them with salads or as a wrap!
