Eggplant Parmesean

INGREDIENTS

  • 1 eggplant cut into 1/2 thick slices (round)

  • 1 cup of cheese of your choice. I used pecorino cheese

  • 2 tsp of crushed red pepper

  • 1 tsp of salt

  • 1 tsp of black pepper

  • 1 cup of marinara sauce of your choice. I used @trader joee

  • Basil or cilantro for garnish

  • 2 tablespoons of oil

A perfect meatless Monday recipe, this eggplant parmesan is not only delicious but also easy to make and healthy to eat!

  • Preheat the oven to 400 degrees
  • In a small bowl mix the cheese with salt, pepper, and red crushed pepper and keep it aside
  • Turn the grill pan on high flame and add oil
  • Once the pan is piping hot grill the eggplant on both sides (roughly 4 min on each side)
  • Once done, turn off the flame, add a generous amount of marinara sauce and the cheese mix on each eggplant
  • Finish cooking in the oven (about 5-7minutes)
  • Garnish with basil or cilantro
  • Enjoy !
  • Note: feel free to add your own choice of cheese and you can also add italian seasoning to the marinara sauce
