Eggplant Parmesean

INGREDIENTS

  • 1 eggplant cut into 1/2 thick slices (round)
  • 1 cup of cheese of your choice. I used pecorino cheese
  • 2 tsp of crushed red pepper
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 1 cup of marinara sauce of your choice. I used @trader joee
  • Basil or cilantro for garnish
  • 2 tablespoons of oil

A perfect meatless Monday recipe, this eggplant parmesan is not only delicious but also easy to make and healthy to eat!

  1. Preheat the oven to 400 degrees
  2. In a small bowl mix the cheese with salt, pepper, and red crushed pepper and keep it aside
  3. Turn the grill pan on high flame and add oil
  4. Once the pan is piping hot grill the eggplant on both sides (roughly 4 min on each side)
  5. Once done, turn off the flame, add a generous amount of marinara sauce and the cheese mix on each eggplant
  6. Finish cooking in the oven (about 5-7minutes)
  7. Garnish with basil or cilantro
  8. Enjoy !

Note: feel free to add your own choice of cheese and you can also add italian seasoning to the marinara sauce
