Chicken Lo Mein

INGREDIENTS

  • 1 chicken breast thinly sliced

  • Noodles of your choice

  • 1 medium onion finely chopped

  • 1/2 cup of shredded carrots (I used the shredded carrots from Trader Joes)

  • 1/2 cup of shredded cabbage (I used the shredded cabbage from Trader Joes)

  • 1 Tablespoon of ginger and garlic

  • 1 Tablespoon of cornstarch

  • Salt and pepper to taste

  • 2 tablespoons of sesame oil

  • Spring onion for garnish

  • Feel free to add any vegetables or protein of your choice

For Sauce

  • 1/4 cup oyster sauce

  • 2 tablespoons of Dark Soy Sauce

  • 1 Tablespoon of Light Soy sauce

  • 3 tablespoons of water or chicken broth

  • 1 tsp of brown sugar

  • 1 tsp of cornstarch

  • Drizzle of sesame oil

Tempted to order take out? Why not make these amazing take out noodles in your home, your way and enjoy the comfort of these saucy, soft and flavorful noodles while being in control of your health. I used cantonese noodles for this recipe but there are many alternatives to that. You can use egg white lo mein, wheat lo mein or even thin wheat spaghetti (will alter the taste very slightly but are still very flavorful)!

  1. Mix all the ingredients for the sauce and set aside
  2. Boil the noodles in hot water for 8-10 min, drain them, run them in cold water and set aside. You may have to add a little oil in them so that they don’t stick together
  3. Prep the chicken by coating it with cornstarch, salt and pepper.
  4. Heat 1 Tablespoon of sesame oil and add onions (make sure the oil is piping hot and you are cooking on high flame)
  5. Cook for 30-40 seconds and add ginger and garlic
  6. Cook for 20 seconds and add chicken and cook till the chicken is cooked completely. You will have to keep stirring it so that it doesn’t burn
  7. Remove from the wok. Turn off the flame and wipe down the wok
  8. Heat the rest of the oil in the wok
  9. Add carrots and cabbage and cook for a minute
  10. Add chicken and mix well
  11. Add noodles and the sauce (don’t forget to stir the sauce before pouring as the cornstarch tends to settle at the bottom), and stir really well till everything is incorporated in the sauce
  12. Enjoy!
