INGREDIENTS

FOR BRUSSEL SPROUTS:

  • Brussel Sprouts
  • 1/2 cup of extra virgin olive oil
  • 1 clove of garlic
  • 1/4 cup of cashews (optional)

FOR TAHINI SAUCE

  • 1/2 cup of Tahini Sauce
  • 1/2 tsp of honey
  • 3 tablespoons of water
  • Salt, pepper and red pepper chili flakes (chili flakes are optional)
  • Juice of 1 fresh lemon
  • A handful of mint or cilantro

I was inspired to make this Brussel Sprouts dish after eating it at City Perch in Pike and Rose. These brussel sprouts are bursting with flavor from the crunchiness of roasting them and the flavorful Tahini sauce.

METHOD FOR BRUSSEL SPROUTS:

  1. Preheat the oven to 400 degrees
  2. Halve the brussel sprouts and add olive oil, salt, pepper and 1 clove of garlic to it
  3. Transfer to an oven tray and bake the brussel sprouts till they are golden brown and well roasted. It took about 35 minutes in my oven
  4. Make sure to turn them in at half time mark

METHOD FOR TAHINI SAUCE:

  1. Blend all ingredients in a blender.
  2. Taste it and adjust to your taste accordingly (add more honey if you like it sweeter)

Once the brussel sprouts are done, remove them from the oven, add the cashews, mix well and drizzle with the Tahini Sauce!
