INGREDIENTS

  • 1 medium size cauliflower cut into medium size pieces

  • 1 potato cut into small cubes

  • 1 large onion finely chopped

  • 2 tablespoons of fresh ginger and garlic

  • 2 teaspoon of cumin seeds

  • 1 tsp of coriander seeds (you can roughly grind them using a mortar and pestle)

  • 1.5 teaspoon of turmeric powder

  • 1 teaspoon of coriander powder

  • 1 teaspoon of garam masala

  • Salt to taste

  • 1 teaspoon of aamchur powder (mango powder)

  • 1 green chili finely chopped

  • 1/2 cup of cilantro

  • 2 tablespoons of oil

This recipe for Aloo Gobhi (spiced cauliflower and potatoes) is super comforting and packed with flavor and can not only be used as a curry, but you can also use it to make stuffed paranthas, top it on a taco with a drizzle of chutney or make a delicious sandwich with it.

  1. Heat oil in a pan and add cumin seeds. When they start to splatter add coriander seeds and green chili Cook for 30 seconds and add onions.
  2. Cook for 1 minute and add ginger and garlic and cook for 30 seconds Add turmeric powder Add half portion of the cilantro
  3. Cook till the onions are golden brown
  4. Add coriander powder, cumin powder, salt allow to cook for 2 minutes
  5. Add cauliflower and potatoes Mix well
  6. Allow to cook on low flame with the lid closed for 15-20 minutes checking in every 5 minutes At mid point add garam masala and mango powder
  7. Finish off with cilantro as garnish and enjoy this dish with roti or naan!
