Alfredo Chicken Pasta

INGREDIENTS

  • 2 cups of pasta of your choice

  • 8 oz of cream cheese

  • 1/2 cup of milk

  • 5-6 cloves of garlic finely chopped

  • 1 small onion finely chopped

  • 1/2 pound of boneless, skinless chicken or chicken breast sliced into thin pieces

  • 2 tsp of paprika

  • Salt to taste

  • Ground pepper to taste

  • 1 tablespoon of neutral oil

  • Herbs of your choice (thyme, rosemary will work really well)

Once in a while I love to dig into a creamy, saucy Alfredo Pasta. I love the versatility of this pasta as you can have it on its own, with mushrooms, ground chicken works well too or chicken breast or thighs.

METHOD

  1. Cook pasta as per the directions and drain it and set it aside
  2. Heat oil in a skillet and add onions and cook till translucent
  3. Add garlic and cook for 1 minute
  4. Add chicken
  5. Add salt, pepper and paprika
  6. Cook the chicken till it’s no longer pink
  7. Remove from the pan and set aside
  8. Add cream cheese and milk in the same pan and melt the cream cheese over low flame
  9. Once it’s melted, adjust the seasoning, add your herbs, chicken and pasta to the sauce and cook with the lid closed for 3-5 minutes
  10. Enjoy!
