Alfredo Chicken Pasta

INGREDIENTS

2 cups of pasta of your choice
-
8 oz of cream cheese
-
1/2 cup of milk
-
5-6 cloves of garlic finely chopped
-
1 small onion finely chopped
-
1/2 pound of boneless, skinless chicken or chicken breast sliced into thin pieces
-
2 tsp of paprika
-
Salt to taste
-
Ground pepper to taste
-
1 tablespoon of neutral oil
-
Herbs of your choice (thyme, rosemary will work really well)
Once in a while I love to dig into a creamy, saucy Alfredo Pasta. I love the versatility of this pasta as you can have it on its own, with mushrooms, ground chicken works well too or chicken breast or thighs.
METHOD
- Cook pasta as per the directions and drain it and set it aside
- Heat oil in a skillet and add onions and cook till translucent
- Add garlic and cook for 1 minute
- Add chicken
- Add salt, pepper and paprika
- Cook the chicken till it’s no longer pink
- Remove from the pan and set aside
- Add cream cheese and milk in the same pan and melt the cream cheese over low flame
- Once it’s melted, adjust the seasoning, add your herbs, chicken and pasta to the sauce and cook with the lid closed for 3-5 minutes
- Enjoy!
