INGREDIENTS

1 medium size cauliflower cut into medium size pieces

1 potato cut into small cubes

1 large onion finely chopped

2 tablespoons of fresh ginger and garlic

2 teaspoon of cumin seeds
-
1 tsp of coriander seeds (you can roughly grind them using a mortar and pestle)

1.5 teaspoon of turmeric powder
-
1 teaspoon of coriander powder
-
1 teaspoon of garam masala
-
Salt to taste

1 teaspoon of aamchur powder (mango powder)

1 green chili finely chopped
-
1/2 cup of cilantro

2 tablespoons of oil
This recipe for Aloo Gobhi (spiced cauliflower and potatoes) is super comforting and packed with flavor and can not only be used as a curry, but you can also use it to make stuffed paranthas, top it on a taco with a drizzle of chutney or make a delicious sandwich with it.
- Heat oil in a pan and add cumin seeds. When they start to splatter add coriander seeds and green chili Cook for 30 seconds and add onions.
- Cook for 1 minute and add ginger and garlic and cook for 30 seconds Add turmeric powder Add half portion of the cilantro
- Cook till the onions are golden brown
- Add coriander powder, cumin powder, salt allow to cook for 2 minutes
- Add cauliflower and potatoes Mix well
- Allow to cook on low flame with the lid closed for 15-20 minutes checking in every 5 minutes At mid point add garam masala and mango powder
- Finish off with cilantro as garnish and enjoy this dish with roti or naan!
