INGREDIENTS

  • 4-5 pieces of boneless and skinless chicken thighs cut into pieces. You can use skinless drumsticks or boneless chicken too

  • 2 tablespoons of oil of your choice

  • 1 large onion finely chopped

  • 1 large tomato

  • 1 Tablespoon of tomato paste

  • 2 tsp of fresh ginger and garlic

  • 1 green chili finely chopped

  • 1 tsp of cumin seeds

  • 1 tsp of turmeric powder

  • 1 tsp of coriander powder

  • 1 tsp of cumin powder

  • 1 tsp of garam masala powder

  • Salt to taste

  • 1/4 cup of yogurt whisked

  • 1 tsp of black pepper

  • 1 tsp of kasturi methi

Tomato Mix

  • In a blender like @ninja, blend the tomato and tomato puree together to make a sauce. If it seems thick, add a little water. Alternatively you can use tomato puree or sauce too

Good food brings people together and this divine masala chicken will have you eating it straight from the pot and will definitely not disappoint!

METHOD

  1. In a large skillet add oil and once heated add the cumin seeds
  2. Once they start to splatter, add onions and cook till brown
  3. Add ginger and garlic and cook with onions for 30-45 seconds
  4. Add the tomato puree
  5. Add salt and all the masalas except black pepper and mix well
  6. Cook till the masala starts to leave oil from the sides
  7. Add chicken and bhuno it on high flame for 3 minutes
  8. Close the lid and let the chicken cook for 7-10 minutes on low to medium flame
  9. Once the chicken starts to leave oil on the sides add yogurt and black pepper and a handful of kasturi methi
  10. Mix well and cook with the lid closed on low flame for another 5 minutes
  11. It’s ready!
  12. Enjoy with basmati jeera rice, naan, roti or any grain of your choice!
