INGREDIENTS

Boneless and skinless chicken thighs. You can certainly use chicken breast but thighs and leg pieces are more meaty and flavorful

3/4 cup of plain yogurt

1 large red onion roughly chopped

1 large tomato roughly chopped

1 tsp of turmeric powder

1-2 tsp of red chili powder depending on how mild or spicy you want to make it

1-2 green chilis finely chopped
-
1 tsp of coriander powder
-
1 tsp of cumin powder

2 tsp of garam masala

1 tsp of cumin seeds

1 Tablespoon of fresh ginger and garlic

1/2 tsp of chaat masala OR 1-2 tsp of oil from any pickle you have at home (this is completely optional but i love the flavor it adds to the chicken. For this particular recipe I added chaat masala but I have made it many times using pickle oil and love how it elevates the flavor)

1/2 cup of roughly chopped cilantro

1 tsp of crushed kasturi methi

2 tablespoons of oil (you can use less or more according to your preference)

Salt to taste
Traditionally I like to bhuno (brown) the chicken to get the most flavor out of it but on certain nights I just want to keep things easy and light and this no fuss and no mess tantalizing chicken allows me to do just that! This recipe is guiltless, bursting with flavor and effortlessly easy to put together. You can prep for it the night before too!
METHOD
- Mix all ingredients listed above in a big bowl and make sure that the chicken is well coated with the masalas
- Marinate overnight or if you are short on time you can marinate it for 30 minutes. I was short on time so marinated it for 30 minutes
- Heat 1 tsp of oil in a large skillet
- For extra flavor you can add fresh ginger and garlic to the oil but this step is completely optional and you can totally skip it and still achieve the flavors
- Add the marinated chicken to the skillet
- Cook with the lid closed for 20-25 min on very low flame stirring occasionally. Resist from stirring too often.
- You will know the chicken is ready once the chicken and masalas start to release their oil
- Enjoy with fresh basmati rice, roti, or naan or even as a burrito with raita!
