Shrimp Croquettes

INGREDIENTS

3 fillets of salmon ( baked at 400 degrees with oil, salt, pepper and garlic)

2 cloves of garlic

2 potatoes

1/2 cup of mild cheddar cheese

1 small white onion finely chopped
-
2 tablespoons of oil
-
2 tsp of salt
-
2 tsp of pepper
-
1 tsp of red pepper flakes

1 cup of all purpose flour
-
2 eggs beaten
-
1 cup of Panko breadcrumbs

Air fryer or if you don’t have an air fryer you can deep fry them or bake them
So, here it is, my first recipe in my new gadget, an Air Fryer. I had shrimp croquettes in Aruba recently and decided to replicate the recipe using salmon. These croquettes are crunchy on the outside and soft and velvety on the inside. If you are looking for a recipe for a weekend get together, these croquettes will not disappoint!
METHOD
- After baking the fish,discard the garlic cloves), and shred the salmon fillets with a fork and set aside
- Boil the potatoes and peel them
- Mash them when hot with a potato masher and immediately add the onions and cheese so that the heat from the potatoes melts the cheese
- Add the salmon to the potato mixture and add salt, pepper and red pepper flakes and adjust any seasonings
- Let this mixture set in the fridge for at least 30 minutes
- After that, make small balls of the mixture, coat well in 1)flour, 2)egg and 3)bread crumbs and set aside. Continue doing this and prepare the desired quantity
- Cook in the airfryer (5 at a time or depending on the size of your air fryer) at 370 degrees for 25 minutes
- Enjoy with Tartar Sauce or any sauce of your choice
